1 Brookshire’s Frozen Pie Crust
1 large red onion, cut into rounds
2 Tbs olive oil
1 cup (4 oz) smoked cheddar cheese, shredded
1 cup assorted cherry tomatoes, cut in half
3/4 cup half-and-half
2 large eggs
1/2 tsp salt
1/4 tsp freshly ground pepper
1/4 tsp ground nutmeg
2 Tbs fresh flat-leaf parsley, chopped
Directions
- Prebake the pie crust in an 8-inch tart pan at 400° F for 10 minutes.
- While crust is cooking, sauté onions with oil in a large skillet over medium-high heat until caramelized. Place onions in pie shell. Top with cheese and tomatoes.
- Whisk together half-and-half, eggs, salt, pepper and nutmeg. Pour into crust. Sprinkle with parsley. Bake at 350° F for 35 to 40 minutes or until set. Let cool on a baking sheet on a wire rack for 15 minutes before serving.
